Maybe you won’t believe me, but this soup is heaven. You must try it before you can judge it.
A friend and I once had the idea to make a 3 course menu. This was the entree. A good entree. We used a Dutch recipe from Bill Granger, I can’t find it in English right now, but I found a good alternative. Recipes below!

The English one:

Spicy Courgette Soup

25 g butter or margarine
1 onion
1 clove garlic
Tablespoon of curry powder
45 g rice
1000 g courgettes
Salt and ground black pepper
Sprig of fresh parsley, single cream and croutons to garnish

Melt butter or margarine in pan. Peel and chop onion. Peel and crush garlic. Cook both gently for 5 mins. Add the curry powder and cook for 1 minute. Trim and chop courgettes. Add onion and garlic and pour in the stock. Simmer for 20 minutes, put the rice in it when 10 minutes left and let is simmer until courgettes are tender and rice is cooked. Puree in a food processor. Add salt and pepper to taste. Garnish with parsley, swirl of cream and croutons.

The Dutch one:

Pittige courgettesoep

Ingrediënten
-2 kleine uien of 1 grote ui in grove stukken
-teentje knoflook
-1 eetlepel olijfolie
-1 eetlepel kerriepoeder
-1 kg courgette
1 1/2 liter groente of kippenbouillon  (kip is lekkerder)
-45 gram witte korrelige rijst

Bereiden
Doe de ui, knoflook, olijfolie en zout in een grote pan en zet die op een matig tot hoog vuur. Bak de ui en knoflook in ongeveer 5 minuten glazig. Voeg het kerriepoeder toe en bak nog 2 minuten. Voeg de courgettes, bouillon, rijst en peper toe en breng aan de kook. Zet het vuur lager en laat nog 20 minuten pruttelen.

Maak de soep in een blender of keukenmachine glad. (Serveer onmiddellijk met een dotje yoghurt en garneer met de dunne courgetteplakken)
